GRAPE VARIETIES: Boal
VINEYARDS AND VINIFICATION: Grapes from various quality vineyards from São Vicente e Prazeres were used. Grapes were pressed in a pneumatic press. Arresting of fermentation takes place at the desired degree of sweetness by adding vinic alcohol. (96%) This wine was aged in casks of French oak in the traditional “Canteiro” system.
MATURATION & BOTTLING: Bottled for the first time in 2001, this 1978 boal was not as concentrated and acidic as it is now that I bottled it for the third time. It aged in casks until 2008 when I decided to transfer all of it into 60 litre demijohns. By doing so I avoided excessive concentration thus maintaining the balance between sugar and acidity which I found to be the ideal in this wine. We bottled 618 units of 750ml all individually numbered.

SERVING & CELLARAGE: This wine was naturally aged in cask. To show it at its best serve between larder (12ºC) and low room temperature (19ºC).
TASTING NOTES AND HARMONIES: This wine was filtered and does not require decanting. It was bottled ready for drinking and will keep well once opened.
